VINIFICATION
Strict application of the «traditional method», ie: hand-picked into small crates, split whole cluster pressing, musts glued racked after 24h, traditional vinification of white wine base, dry, quiet, vats (20°), “spirit” tirage added to the wine, drawing in bottles, fermentation in air conditioned cellars 15 ° after 24 months on battens, riddling, disgorging, adding the “dosage” final closure.


CELLARD MATURING
On sale after 10 months in bottle.


TASTING COMMENTS
A lovely fine mousse on a dress of pale gold with green tints, the bubbles are numerous and very fine, the base wine is quickly perceived, rich, well-structured, fruity, incisive enough without depriving the wine on a scale some. Nice work!
