VINIFICATION
Manual harvest – Selective picking on sorting table – 100% destemming – Open fermentor – 20 days vatting – Temperature control – Natural yeast – Low intrusive, with such a level of concentration, the structure comes naturally and allows all the soil expression. Vertical press.


CELLARD MATURING
18 months in oak barrels – 40% new barrels – Malolactic fermentation completed.


TASTING COMMENTS
Allen Meadows: “A ripe and brooding nose is dense and serious with aromas of earth, animal, dark pinot and underbrush hints. The equally serious and concentrated broad-shouldered flavors possess excellent volume as well as the same evident minerality before concluding in an austere, backward and very firm finish. This will need plenty of cellar time as it will require at least 7 to 8 years before the tannic backbone becomes more supple.”
