VINIFICATION
Strict application of the «traditional method», ie: hand-picked into small crates, split whole cluster pressing, musts glued racked after 24h, traditional vinification of white wine base, dry, quiet, vats (20°), “spirit” tirage added to the wine, drawing in bottles, fermentation in air conditioned cellars 15 ° after 24 months on battens, riddling, disgorging, adding the “dosage” final closure.


CELLARD MATURING
On sale after 10 months in bottle.


TASTING COMMENTS
Numerous and very fine bubbles, a pink dress boudoir of Champagne, nose fresh crushed fruit, strawberry. On the palate the fruity side dominates, nice minerality on the finish. Beautiful magnitude.
